Blankkalfsvlees
Blank kalfsvlees is echt een luxeproduct! Het vlees is jong en mals en heeft een laag vetgehalte. Dit zorgt voor een zeer verfijnde smaak.
De kalveren krijgen hoofdzakelijk melk gevoerd wat zorgt voor een fijne structuur van het vlees. De kleur van het vlees is ook blank.
De pakketten worden diepgevroren verkocht.

Lenderollade
De lenderollade is gemaakt van dunne lende. Dit stukje vlees bevind zich in de rug van het kalf. Het is een mager en mals stuk vlees. De rollade weegt ongeveer 750 gram. De rollade is gekruid met een beetje peper en zout en daarna geknoopt.
Bereiding
De lenderollade moet je kort dichtsnoeien en daarna op een lage temperatuur doorgaren.
